  4. Boiled oil: The main reason for using the boiled oil production method in the past was that there was no “separator” that used “centrifugal” force to extract olive oil, as all olive oil production was done manually.

Production method: The olives are boiled by placing the fruits with water in iron barrels, and a fire is lit underneath them until they boil. Then the fruits are extracted from the hot water and spread on the roofs of residential houses under direct sunlight for 14 days and are turned daily so that the water evaporates from the olives and the fruits become dry and free of water. Then they are threshed on the "stone bed", and then the ajiba is transferred to extract the boiled olive oil through a gradual sorting system, which is the "manual model" before the fifties of the last century" or the "semi-automatic" model after 1970 AD. Note that only old olives, or what is known locally as "Roumi", are suitable for boiling.

The presses that produce boiled oil of both types, “boiled or dried,” are still operating today in the Koura District. The town of “Tabneh” occupies the scene in boiling olives, followed by “Deir Abi Saeed - Marhaba” and “Kafr Awan.”
