تتراوح قيمة مقياس "سكوفيل" اختصارًا SHU ما بين الصفر للفلفل الحلو إلى الملايين، ومن الجدير بالذكر لا تحتوي بذور الفلفل على "الكابسيسين" وإنما يوجد في الأجزاء البيضاء داخل الفلفل.
