Dough ingredients

  1. Coarse semolina - 2 cups
  2. Fine semolina (farkha) - 2 cups
  3. Fine sugar - 2 tablespoons
  4. unsalted butter - 225 g
  5. Mahlab Powder - 1 tsp
  6. Powdered Milk - 2 tablespoons
  7. Warm water - 2 tablespoons
  8. Instant yeast - 1 tsp
  9. Rose water and blossom water (optional) - 1 tablespoon

 

Stuffing ingredients

  1. Fine dates or ready-made date paste - 1 kilo
  2. Cinnamon Powder - 1 tsp
  3. Ground anise - 1 teaspoon

 

How to prepare

To prepare the dough:

  1. Pour the coarse semolina into a large bowl, add the chicken semolina and icing sugar, and mix well.
  2. Melt the butter in a small frying pan, then pour it over the semolina.
  3. We make sure that the mixture is safe to handle with hands, then start rubbing it well until it absorbs all the melted butter and is completely mixed.
  4. Cover the bowl with a plate or a piece of cloth or nylon and leave the dough to rest overnight.
  5. After the dough rests for a whole night, add the mahlab and powdered milk to it.
  6. Dissolve the instant yeast in warm water until completely dissolved.
  7. Add yeast liquid to the dough and mix well with hands.
  8. Gradually add rose water and blossom water with continuous kneading until the dough becomes cohesive and not sticky.

 

To prepare the filling:

  1. Remove the seeds from the dates and place them in a large bowl.
  2. Add cinnamon and anise to it and mix well with hands, rubbing until it becomes like a paste.

 

To prepare the maamoul:

  1. Heat the oven at 180 degrees Celsius.
  2. Form small balls of date paste and set aside on a plate.
  3. We cut small balls of dough and stretch them on our hands to become open, then stuff them with a ball of date paste, then close the dough around the dates and seal it tightly until the filling is completely contained.
  4. We bring the maamoul mold and put the stuffed dough ball inside the cavity of the mold and press it gently until it takes the shape of the cavity completely.
  5. Hold the mold upside down and lightly knock it on our hands or on a flat surface to get the maamoul piece out in its new shape.
  6. Grease a large rectangular oven tray with butter, then halve the maamoul seeds in it.
  7. Bake in the prepared oven for 20 minutes or until golden brown.
  8. Take it out of the oven and then leave it aside to cool.
  9. After it cools, sprinkle it with powdered sugar and serve.
