Italian tomato soup ingredients
These ingredients are enough for about 6 people
- (2) kg tomatoes, cut in half
- (Half a cup of olive oil
- (6) finely minced garlic cloves
- (1) Onion large size, finely chopped
- Leek (white part only).
- (1) tablespoon of Italian seasoning
- (1) tablespoon of sugar
- (2) teaspoon salt
- (1) teaspoon black pepper
- (1) teaspoon finely chopped fresh thyme
- (1) teaspoon finely chopped fresh oregano
- (1) teaspoon finely chopped fresh rosemary
- (3) cups vegetable broth
How to prepare
- Preheat the oven to 150°C. Cover an oven tray with butter paper.
- In a bowl, put tomatoes, garlic, onions, shallots, olive oil, Italian seasoning, sugar, salt and black pepper. Stir the ingredients until they overlap.
- Place the marinated tomatoes on the baking tray, with the skin facing down. Add the remaining amount of dressing in the bowl over the tomatoes.
- Add thyme, oregano and rosemary. Put the tray into the oven for an hour. Then, raise the oven temperature to 190°C and cook the mixture for 30 minutes.
- Remove the tray from the oven and put the tomato mixture in a saucepan over a medium heat. Add vegetable broth and leave the pot on the fire until boiling.
- Put out the fire. Blend the mixture with an electric mixer until you get a smooth texture.
- Garnish the soup with a spoonful of cooking cream and some fresh basil leaves.
- Serve the soup hot.
