How to prepare

  1. Preheat the oven to 150°C. Cover an oven tray with butter paper.
  2. In a bowl, put tomatoes, garlic, onions, shallots, olive oil, Italian seasoning, sugar, salt and black pepper. Stir the ingredients until they overlap.
  3. Place the marinated tomatoes on the baking tray, with the skin facing down. Add the remaining amount of dressing in the bowl over the tomatoes.
  4. Add thyme, oregano and rosemary. Put the tray into the oven for an hour. Then, raise the oven temperature to 190°C and cook the mixture for 30 minutes.
  5. Remove the tray from the oven and put the tomato mixture in a saucepan over a medium heat. Add vegetable broth and leave the pot on the fire until boiling.
  6. Put out the fire. Blend the mixture with an electric mixer until you get a smooth texture.
  7. Garnish the soup with a spoonful of cooking cream and some fresh basil leaves.
  8. Serve the soup hot.
