Egyptian Koshary Ingredients:
- ½ kilo of pasta (spaghetti).
- ½ kilo of white rice.
- ¼ kilo of brown lentils.
- ½ kilo chickpeas, ready to eat.
- 1 kilo of tomatoes.
- ½ kilo of dried onions.
- frying oil.
- Vermicelli as desired.
- salt.
- black pepper.
- cumin.
- garlic.
How to make koshari:
- Cut the onion into slices and fry in oil until it turns golden.
- Boil the pasta with water, oil and salt, and after it is cooked, take a portion of the onion oil and stir the pasta with it.
- Boil the lentils with a little salt and cumin, then toss with a little onion oil.
- Brown the vermicelli, then add rice soaked in water, salt and oil, then water to boil the rice.
- To prepare the red sauce: We chop a little garlic and fry it with a little oil, then add tomato juice, salt and pepper and leave it on low heat until it becomes thick in consistency, thus the sauce is ready.
To serve the koshari: Place a layer of rice in the serving dish, then the pasta, then the lentils. We then distribute the fried onions along the sides of the dish along with the chickpeas, then pour part of the sauce over the dish.
